Affinity of Tannins to Cellulose: A Chromatographic Tool for Revealing Structure-Activity Patterns

Food, feed and beverage processing brings tannins into contact with macromolecules, such as proteins polysaccharides, leading to different chemical physical interactions. The interactions of are well known but less is about the affinity polysaccharides. We used bacterial cellulose from nata de coco a model compound investigate how interact by adsorption measurements using UPLC-DAD. also explored structure influences these included nine individual structurally hydrolysable (HTs) eight well-defined proanthocyanidin (PA) fractions monomeric units, mean degree polymerization both A- B-type linkages. Tannins were found have strong weak cellulose, depending on exact tannin. For HTs, main structural features affecting flexibility HT molecule number free galloyl groups. PAs, prodelphinidins higher than procyanidins. Similarly presence groups in galloylated PAs PA led stronger interaction. Adsorption UPLC-DAD proved be sensitive rapid tool evaluate cellulose.
